BLACK PEPPER: A perennial climbing vine that is the source of commercial black pepper. This spice has been the cause of wars and of much of Western Europe’s early colonial expansion. It is native to the Malabar Coast of India but is now widely grown in many tropical countries. This is probably the most popular spice in Western countries.
These plants will grow rapidly in Vallarta in a semi-shade environment. They begin to produce peppercorns usually after the second year.
The fruits are picked when they begin to turn red and are then immersed in boiling water for about 10 minutes, causing them to turn dark brown or black in about an hour. They are then spread out to dry in the sun for three or four days.
